A quick and easy summer cocktail featuring a vibrant blue raspberry and lemon slush with a boozy kick, perfect for cooling down on hot days.

  • 2 cups (300 grams) frozen blue raspberries (or regular raspberries)
  • 1/2 cup (120 ml) fresh lemon juice (about 34 lemons)
  • 1/4 cup (60 ml) simple syrup (homemade or store-bought)
  • 1/2 cup (120 ml) vodka
  • 1/2 cup (120 ml) cold water or sparkling water
  • 1 cup (240 ml) ice cubes
  • Blue food coloring (optional, a few drops)
  • Fresh lemon slices and mint leaves (for garnish)

Instructions

  1. Juice the lemons to get 1/2 cup (120 ml) fresh lemon juice, straining out seeds and pulp.
  2. Make simple syrup if not using store-bought by dissolving equal parts sugar and water over medium heat, then cool completely.
  3. In a blender, combine frozen blue raspberries, lemon juice, simple syrup, and vodka. Blend until smooth but thick and icy, about 1-2 minutes.
  4. Add ice cubes and cold water or sparkling water to the blender. Pulse a few times to combine and achieve a slushier texture, about 30 seconds. Avoid overblending.
  5. Taste and adjust sweetness or tartness by adding more simple syrup or lemon juice as needed. Add blue food coloring if desired.
  6. Pour the slush into chilled glasses and garnish with fresh lemon slices and mint leaves.
  7. Serve immediately for best texture. If storing, keep covered in the freezer for up to 30 minutes and stir gently before serving.

Notes

Use fresh lemon juice for best flavor. Pulse ice carefully to avoid watery slush. Chill glasses beforehand to keep drink colder longer. For non-alcoholic version, replace vodka with extra sparkling water or lemon-lime soda. Adjust sweetness and tartness to taste.
