Refreshing Frozen Strawberry Lemonade Popsicles

A simple and refreshing summer treat made with just three ingredients: frozen strawberries, fresh lemon juice, and sweetener. Perfect for cooling down on hot days with a bright, tangy-sweet flavor.

  • 2 cups (300g) frozen strawberries
  • 1/2 cup (120 ml) fresh lemon juice
  • 1/4 to 1/3 cup (50-65g) sweetener (organic cane sugar, honey, or agave syrup)
  • Optional: pinch of sea salt
  • Optional: fresh mint leaves
  • Optional: splash of water or unsweetened lemonade (to loosen mixture)

Instructions

  1. Measure out 2 cups (300g) of frozen strawberries, 1/2 cup (120 ml) fresh lemon juice, and 1/4 to 1/3 cup (50-65g) of your chosen sweetener.
  2. In a mixing bowl, stir the sweetener into the lemon juice until mostly dissolved.
  3. Place the frozen strawberries in your blender or food processor and pulse a few times to break them down slightly.
  4. Pour the lemon-sweetener mixture over the strawberries and blend until smooth and creamy, about 1-2 minutes.
  5. Taste and adjust sweetness if needed, blending again for 10-15 seconds if adding more sweetener.
  6. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  7. Insert sticks and freeze for at least 4-6 hours, preferably overnight.
  8. To serve, run the molds under warm water for a few seconds to loosen and gently pull out the popsicles.

Notes

If the mixture is too thick to pour, add a splash of water or unsweetened lemonade to loosen it. Insert sticks after 1-2 hours if molds don’t hold sticks firmly. Wrap popsicles individually in parchment paper after freezing to prevent sticking. Avoid microwaving to soften; let sit at room temperature instead.
