  • 1 cup fresh strawberries, hulled and halved (or frozen)
  • 2 ounces tequila blanco
  • 1 ounce triple sec or Cointreau
  • 1 ounce fresh lime juice
  • 1 to 1.5 tablespoons simple syrup
  • 2 cups ice cubes (crushed or whole)
  • Salt or sugar for rimming the glass (optional)
  • Fresh strawberry or lime wedge for garnish

Instructions

  1. Rub a lime wedge around the rim of your glass, then dip it into coarse salt or sugar on a small plate. Set aside.
  2. Wash, hull, and halve fresh strawberries. If using frozen, no prep needed other than measuring.
  3. In the blender pitcher, combine 1 cup of strawberries, 2 ounces tequila blanco, 1 ounce triple sec, 1 ounce fresh lime juice, and 1 to 1.5 tablespoons simple syrup. Pour in 2 cups ice cubes.
  4. Pulse the ingredients starting at low speed, then ramp up to high. Blend for about 30 to 45 seconds until you get a thick, slushy texture. Stop and scrape the sides if needed.
  5. If too thick, add a splash of water or more lime juice to thin slightly. If too thin, add more ice and pulse again. Taste and add more simple syrup if needed.
  6. Carefully pour into the prepared glasses. Garnish with a fresh strawberry or lime wedge on the rim.

Notes

Do not over-blend to maintain the icy texture. Use fresh lime juice for brightness. Adjust sweetness gradually. Use a strong blender and pulse ice first if needed. Rim glasses just before serving to avoid sogginess. Store leftovers in an airtight container in the freezer and re-blend before serving.
