A quick and easy 5-minute summer recipe combining the sharp zing of fresh lemons with sweet strawberries, vodka, and crushed ice for a perfectly smooth and refreshing slushie.

  • 2 cups (300g) frozen strawberries
  • 1/2 cup (120ml) fresh lemon juice
  • 3/4 cup (180ml) vodka
  • 1/4 cup (60ml) simple syrup
  • 2 cups (480ml) ice cubes
  • Optional: fresh mint leaves for garnish

Instructions

  1. Juice the lemons by rolling them on the counter, cutting in half, and using a citrus juicer to extract 1/2 cup (120ml) of juice, removing any seeds.
  2. Make simple syrup if not using store-bought: combine 1/4 cup (50g) granulated sugar with 1/4 cup (60ml) water in a small saucepan, heat gently while stirring until sugar dissolves, then cool to room temperature.
  3. Add frozen strawberries, lemon juice, vodka, simple syrup, and ice cubes to a high-speed blender.
  4. Pulse to break up the ice, then blend on high for 30-45 seconds until smooth but still slushy. Adjust consistency by adding water or lemonade if too thick, or more ice if too thin.
  5. Taste and adjust sweetness or tartness by adding more syrup or lemon juice as needed, then blend briefly again.
  6. Serve immediately in chilled glasses, garnished with fresh mint or a lemon wheel if desired.

Notes

Do not over-blend to avoid melting the ice and making the slushie watery. Use frozen strawberries for best texture. Fresh lemon juice is essential for bright flavor. Leftovers can be stored in the freezer for up to 24 hours; let soften before stirring and serving again. Chilling glasses helps keep the slush from melting too fast.
