  • 4 cups cubed seedless watermelon (about 600 grams)
  • ½ small jalapeño pepper, seeds removed
  • 1 cup (240 ml) tequila blanco
  • ½ cup (120 ml) fresh lime juice (about 45 limes)
  • ¼ cup (60 ml) simple syrup
  • 3 cups ice cubes (about 450 grams)
  • Salt for rimming glasses (optional)
  • Garnishes: lime wedges, watermelon slices, or thin jalapeño slices (optional)

Instructions

  1. Cube 4 cups of fresh watermelon, removing seeds if any. Slice half a small jalapeño, removing seeds for less heat. Juice ½ cup of fresh lime juice (about 4-5 limes).
  2. Make simple syrup if needed by dissolving equal parts sugar and water (¼ cup each) in a small saucepan over gentle heat. Let cool.
  3. In a high-speed blender, combine watermelon cubes, jalapeño slices, 1 cup tequila blanco, ½ cup lime juice, ¼ cup simple syrup, and 3 cups ice cubes.
  4. Pulse to break down the ice, then blend on high for 30-45 seconds until the mixture reaches a thick, icy, slushie consistency that is smooth but pourable.
  5. Taste and adjust: add more simple syrup or watermelon if too spicy, more lime juice if too sweet, or a little cold water or tequila if too thick.
  6. Rub a lime wedge around the rim of glasses and dip into salt if desired.
  7. Pour the slushie into prepared glasses and garnish with a slice of jalapeño, lime wedge, or watermelon chunk.
  8. Serve immediately and enjoy responsibly.

Notes

Adjust jalapeño heat by removing seeds and starting with half a small pepper. Use fresh ingredients for best flavor. Pulse blending to avoid overheating the blender motor. Freeze watermelon cubes ahead for thicker slushie. Strain if a smoother texture is preferred. Store leftovers in airtight container in freezer up to 2 days and re-blend before serving.
