  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper (optional)
  • 1 cup chicken broth or water
  • 1 cup yellow mustard (Gulden’s recommended)
  • ½ cup apple cider vinegar
  • ¼ cup honey or brown sugar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce (e.g., Frank’s RedHot, optional)
  • Salt and pepper, to taste
  • Slider buns (potato rolls recommended)
  • Coleslaw (optional)
  • Pickles or pickled jalapeños (optional)

Instructions

  1. Pat the pork shoulder dry with paper towels.
  2. In a small bowl, mix smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  3. Rub the spice blend all over the pork, pressing it in gently.
  4. Place the pork shoulder in the slow cooker.
  5. Pour the chicken broth or water around the pork (not on top).
  6. Cover and cook on low for 7-8 hours or on high for 4-5 hours until pork is tender and pulls apart easily.
  7. While pork cooks, whisk together yellow mustard, apple cider vinegar, honey or brown sugar, Worcestershire sauce, hot sauce (if using), salt, and pepper in a bowl.
  8. When pork is done, transfer to a large bowl and shred using two forks or meat claws, discarding large chunks of fat.
  9. If the meat seems dry, add a splash of cooking liquid back in.
  10. Pour about half the Carolina Gold BBQ sauce over the shredded pork and toss gently to coat.
  11. Toast slider buns lightly if desired.
  12. Assemble sliders by piling pulled pork on the bottom half of each bun, adding coleslaw and pickles or jalapeños if desired, then topping with the bun.
  13. Serve immediately for best texture.

Notes

For gluten-free, use gluten-free slider buns or lettuce wraps. For dairy-free slaw, substitute mayo with dairy-free mayo or Greek yogurt. Toast buns to prevent sogginess. Save extra sauce for dipping. Let pork rest 10 minutes before shredding. Adjust sauce quantity to avoid soggy sliders.
