A quick and easy savory crack chicken dip loaded with crispy bacon and sharp cheddar cheese, perfect for parties and game nights. This creamy, cheesy dip is a crowd-pleaser that combines tender chicken, ranch seasoning, and a luscious cream cheese base.

Ingredients

Scale
  • 2 cups shredded rotisserie chicken or cooked chicken breast
  • 6 slices bacon, cooked crispy and crumbled
  • 8 ounces cream cheese, softened (full-fat)
  • 1 cup shredded sharp cheddar cheese
  • 1 packet (about 1 ounce) ranch seasoning mix or 2 tablespoons homemade ranch seasoning
  • 1/2 cup sour cream
  • 2 stalks green onions, thinly sliced (optional)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon freshly ground black pepper
  • Fresh parsley, a small handful chopped (optional garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon: Fry 6 strips of bacon until crispy, about 8-10 minutes. Transfer to a paper towel-lined plate to drain, then crumble once cool.
  3. Mix the base: In a medium bowl, combine 8 ounces of softened cream cheese, 1/2 cup sour cream, and 1 packet (or 2 tablespoons) of ranch seasoning. Stir until smooth and creamy, about 2 minutes.
  4. Add the chicken: Fold in 2 cups shredded cooked chicken, 1 cup shredded sharp cheddar cheese, 1 teaspoon garlic powder, and 1/2 teaspoon freshly ground black pepper. Mix gently to combine.
  5. Incorporate bacon and green onions: Reserve about 2 tablespoons of crumbled bacon for topping. Add the rest along with 2 sliced green onions into the mixture. Stir well.
  6. Transfer to baking dish: Spoon the dip into your 8×8 inch oven-safe dish, smoothing the top with a spatula.
  7. Add toppings: Sprinkle the remaining bacon and a little extra cheddar cheese on top for a golden crust.
  8. Bake: Place the dish in the oven and bake for 20-25 minutes until bubbly and lightly browned on top.
  9. Let it rest: Remove from the oven and let the dip sit for about 5 minutes to thicken slightly before serving.
  10. Garnish and serve: Sprinkle chopped fresh parsley for color and serve warm with crackers, sliced baguette, or fresh veggies.

Notes

If the dip looks too thick before baking, add a splash of milk or chicken broth to loosen it up. Watch carefully in the last 5 minutes to avoid over-browning. Let the dip rest after baking to thicken and intensify flavors. Store leftovers in an airtight container in the fridge for up to 3 days and reheat gently with a splash of milk if needed. Reserve some bacon for fresh topping after refrigeration to maintain crunch.
