Savory Slow Cooker Pineapple BBQ Chicken Sliders

These sliders combine tender slow-cooked chicken with a tangy pineapple BBQ sauce, perfect for easy party bites that impress with minimal effort.

  • 1 cup canned pineapple chunks, drained

  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 12 slider buns (Hawaiian rolls or soft dinner rolls)
  • Optional toppings: coleslaw, pickles, sliced jalapeños

Instructions

  1. In a mixing bowl, combine 1 cup BBQ sauce, ½ cup pineapple juice, 2 tablespoons honey, 1 tablespoon apple cider vinegar, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon smoked paprika, and salt and pepper to taste. Whisk until smooth.
  2. Place 2 pounds boneless, skinless chicken breasts in the slow cooker. Pour the sauce evenly over the chicken, coating each piece.
  3. Scatter 1 cup drained canned pineapple chunks over the chicken and sauce.
  4. Cover and cook on low for 4 hours or until chicken is tender and shreds easily. Alternatively, cook on high for 2.5-3 hours but watch closely to avoid drying out.
  5. Shred the chicken directly in the slow cooker using two forks or meat claws, mixing well with the sauce and pineapple.
  6. If desired, place slider buns on a baking sheet and warm in a 350°F oven for 5 minutes to toast lightly.
  7. Spoon generous portions of pineapple BBQ chicken onto each bun. Add optional toppings like coleslaw or pickles.
  8. Serve immediately. Sliders can be kept warm in the slow cooker on the ‘keep warm’ setting for up to 1 hour.

Notes

Drain pineapple chunks well to avoid watery sauce. Toast slider buns to prevent sogginess, especially if using moist toppings like coleslaw. Resist lifting the slow cooker lid during cooking to maintain temperature. Use a slow cooker liner for easier cleanup. For thicker sauce after shredding, cook on high uncovered for 10-15 minutes.
