  • 1 cup (150g) fresh blueberries, rinsed and patted dry

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter with granulated and brown sugars until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and lemon zest.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding by hand until just combined.
  6. Gently fold in the fresh blueberries with a rubber spatula, being careful not to break them.
  7. Using a cookie scoop or tablespoon, drop dough balls about 2 inches apart on the prepared baking sheets.
  8. Bake for 12-14 minutes until edges are set and centers look slightly underbaked but not raw.
  9. Allow cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
