  • 1 large egg yolk

  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (for dough)
  • For coating: 1/4 cup granulated sugar mixed with 1 tablespoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
  3. Add the pumpkin puree, whole egg, egg yolk, and vanilla extract. Beat on medium speed until fully combined and smooth.
  4. In a separate medium bowl, whisk together the flour, baking soda, cream of tartar, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed just until the flour disappears. Do not overmix.
  6. In a small shallow bowl, mix the sugar and cinnamon for the coating.
  7. Scoop dough into 1.5-inch balls and roll them in the cinnamon sugar mixture until fully coated.
  8. Place cookies on heavy-gauge rimmed baking sheets, leaving 2 inches of space between each.
  9. Bake for 10-12 minutes, until edges are set and lightly golden but centers still look soft.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure butter and eggs are at room temperature for best results. Do not overbake; cookies will continue to cook on the hot pan. Use 100% pure pumpkin puree, not pie filling. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, use vegan butter substitute.
