A refreshing, bubbly homemade drink combining tart lime juice and sweet cherry syrup with sparkling water, perfect for hot days and summer gatherings.

  • 3/4 cup granulated sugar
  • 1 cup water (for syrup)
  • 3 cups water (for sparkling mix)
  • 1/2 cup fresh lime juice (about 45 limes)
  • 3 cups sparkling water or club soda, chilled
  • Ice cubes or crushed ice, for serving
  • Fresh lime slices, for garnish
  • Fresh cherries, for garnish

Instructions

  1. Make the Cherry Syrup: Combine 1 cup pitted cherries, 3/4 cup granulated sugar, and 1 cup water in a medium saucepan. Bring to a gentle simmer over medium heat, stirring occasionally to dissolve the sugar. Let it simmer for about 10 minutes until the cherries soften and the liquid thickens slightly.
  2. Strain the Syrup: Remove the pan from heat. Pour the mixture through a fine mesh strainer into a bowl or pitcher, pressing the cherries gently with a spoon to extract all the syrup. Discard the solids.
  3. Juice the Limes: While the syrup cools, juice about 4-5 fresh limes to get 1/2 cup (120 ml) of juice. Strain out seeds but keep the pulp.
  4. Combine the Cooler: In a large pitcher, mix the cooled cherry syrup with fresh lime juice. Add 3 cups (720 ml) sparkling water or club soda. Stir gently to combine without losing too many bubbles.
  5. Serve: Fill glasses with ice cubes or crushed ice, pour the cherry limeade cooler over, and garnish with fresh lime slices and a few whole cherries.
  6. Optional Chill Time: Chill the combined cooler for 30 minutes before serving for extra refreshment.

Notes

Use fresh lime juice for best flavor. Chill sparkling water before mixing to keep bubbles lively. Pour sparkling water slowly to preserve fizz. Cherry syrup can be made ahead and refrigerated up to one week. For low sugar, substitute sugar with honey, agave, or stevia. Adding fresh mint to syrup while simmering adds a refreshing herbal note.
