  • 1 teaspoon distilled white vinegar

  • ½ teaspoon sweet paprika
  • 3 to 4 large black olives, pitted
  • White onion or chives, finely minced (optional)

Instructions

  1. Boil eggs in a single layer covered with cold water. Bring to a rolling boil, then reduce heat and simmer for 9-12 minutes.
  2. Transfer eggs to an ice bath immediately and let sit for at least 5 minutes to cool.
  3. Peel the eggs under running water, pat dry, and slice in half lengthwise. Scoop out yolks into a medium bowl.
  4. Mash yolks with mayonnaise, mustard, vinegar, salt, and paprika until smooth and creamy.
  5. Transfer mixture to a piping bag or ziplock bag with the corner cut off.
  6. Pipe the filling back into the egg white halves.
