  • 3 to 4 pounds chuck roast (1.4 to 1.8 kg), well-marbled
  • 1 packet ranch seasoning mix (~1/4 cup or 30 g)
  • 1 packet au jus gravy mix (~1/4 cup or 30 g)
  • 1/2 cup unsalted butter (113 g, 1 stick), softened
  • 6 to 8 pepperoncini peppers
  • 1/4 cup juice from pepperoncini jar (60 ml)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Pat the chuck roast dry with paper towels and trim any large pieces of excess fat.
  2. Optional: Heat a tablespoon of oil in a skillet over medium-high heat and brown the roast on all sides, about 3-4 minutes per side.
  3. Place the roast in the center of the slow cooker.
  4. Sprinkle the ranch seasoning and au jus gravy mix evenly over the roast.
  5. Cut the softened butter into pats and place on top of the roast.
  6. Scatter the pepperoncini peppers around the roast and pour the pepperoncini juice over the top.
  7. Cover and cook on low for 8 hours or on high for 4-5 hours until the roast shreds easily with a fork.
  8. Check for doneness; if not tender, cook for an additional 30 minutes and test again.
  9. Rest the roast for 10 minutes before slicing or shredding.
  10. Serve with the buttery sauce spooned over the top.

Notes

Browning the roast before slow cooking is optional but adds extra flavor. Use softened unsalted butter for best results. Avoid lifting the slow cooker lid during cooking to maintain heat. Save some cooking juices to use as gravy. For dairy-free, substitute butter with coconut oil or plant-based margarine. Adjust seasoning saltiness as ranch and au jus mixes can be salty.
