Instructions

  2. Mix Sugars and Butter: Add 3/4 cup (150g) granulated sugar and 3/4 cup packed (165g) brown sugar to the browned butter. Stir or whisk until combined and slightly smooth.
  3. Add Eggs and Vanilla: Beat in 2 large room-temperature eggs, one at a time, then stir in 2 teaspoons vanilla extract until mixture is glossy and thick.
  4. Combine Dry Ingredients: In a separate bowl, whisk together 2 1/4 cups (280g) all-purpose flour, 1 teaspoon baking soda, and 1 teaspoon fine sea salt.
  5. Mix Dry into Wet: Gradually add the dry ingredients to the wet, folding gently with a spatula or mixer on low. Stop mixing as soon as the flour disappears to avoid toughness.
