  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ½ cups (180g) powdered sugar
  • 23 tablespoons milk or heavy cream
  • ½ teaspoon vanilla extract
  • Black gel food coloring
  • White icing (optional)

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes. Add the egg and vanilla extract, then beat until combined.
  2. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. The dough will be soft and slightly sticky.
  3. Divide the dough into two discs, wrap each in plastic wrap, and refrigerate for at least 30 minutes.
  4. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  5. On a lightly floured surface, roll one disc of dough to ¼-inch thickness. Cut out rounds with a 2.5 to 3-inch round cookie cutter and place 2 inches apart on prepared baking sheets. Gather scraps, re-roll, and cut more cookies.
  6. Bake for 8-10 minutes, until edges are just barely golden. Let cool on baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
  7. In a small bowl, whisk together powdered sugar, 2 tablespoons milk or cream, and vanilla extract until thick but pourable. Divide icing into two bowls. Color one bowl with black gel food coloring until deep black. Leave the other white.
  8. Transfer each color to separate piping bags or zip-top bags. Snip a very small tip off the corner of each bag.
  9. Pipe a thin outline of white icing around the edge of each cookie, then fill in the center. Let set for about 5 minutes.
  10. Pipe a small dot of black icing in the center of the cookie. Pipe concentric circles around it, spacing about ¼ inch apart.
  11. Take a toothpick and drag it from the center dot outward through all the circles, creating spokes. Wipe toothpick clean and repeat until you have 6-8 spokes total.
  12. Let decorated cookies sit at room temperature for 1-2 hours until icing is completely set.

Notes

Chill dough thoroughly to prevent spreading. Use gel food coloring for best results. Test icing consistency before decorating. Work in batches to ensure the base layer is not too set.
