  • 1/2 cup honey
  • 1 1/2 cups old-fashioned rolled oats
  • 1/2 cup mini chocolate chips
  • 1/4 cup ground flaxseed
  • 1/4 cup protein powder (vanilla or unflavored)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the wet ingredients. In a large mixing bowl, add 1 cup of creamy peanut butter, 1/2 cup of honey, and 1 teaspoon of vanilla extract. Stir them together until smooth and fully combined.
  2. Add the dry ingredients. Add 1 1/2 cups of old-fashioned rolled oats, 1/4 cup of ground flaxseed, 1/4 cup of protein powder, and 1/4 teaspoon of salt to the bowl. Stir everything together until no dry patches remain.
  3. Fold in the chocolate chips. Add 1/2 cup of mini chocolate chips to the mixture and fold them in gently until evenly distributed.
  4. Chill the mixture. Cover the bowl and place it in the refrigerator for 15-20 minutes.
  5. Roll into balls. Using a small cookie scoop or spoon, portion out about 1 tablespoon of the mixture and roll it between your palms to form a smooth ball. Place each ball on a baking sheet lined with parchment paper.
  6. Chill again. Place the baking sheet with the rolled balls in the refrigerator for at least 30 minutes to firm up.
  7. Store and enjoy. Transfer the protein balls to an airtight container and store them in the refrigerator for up to two weeks.

Notes

For best results, use room temperature peanut butter. If the mixture is too sticky, chill longer before rolling. If too dry, add a tablespoon of honey or peanut butter. These protein balls can be frozen for up to three months.
